A new study by researchers at the University of California, San Francisco has found that consuming a diet high in fruits and vegetables can significantly reduce the risk of developing heart disease.
The study, published in the journal Circulation, analyzed data from over 100,000 participants in the Nurses’ Health Study and the Health Professionals Follow-Up Study. The participants were followed for up to 30 years and their diets were assessed every four years.
The results showed that those who consumed the highest amount of fruits and vegetables had a 30% lower risk of developing heart disease compared to those who consumed the lowest amount. This was true even after taking into account other factors such as age, smoking, and physical activity.
Lead author Dr. Frank Hu, chair of the Department of Nutrition at Harvard T.H. Chan School of Public Health, stated that “our findings support current dietary guidelines that recommend increasing intake of fruits and vegetables as a way to promote cardiovascular health.”
The study also found that certain types of fruits and vegetables were particularly beneficial. Leafy greens, such as spinach and kale, were associated with the greatest reduction in risk, followed by berries, citrus fruits, and whole fruits.
The researchers also noted that the protective effect of fruits and vegetables was stronger for women than men, and for younger adults compared to older adults.
While the study did not establish a cause-and-effect relationship, the findings add to the growing body of evidence that a plant-based diet can have significant health benefits. Previous studies have also linked high fruit and vegetable intake to a lower risk of cancer, diabetes, and obesity.
